Sadly, players get injured every game, and during practice, and off the field. The last game is no more risky than the first game or the 4th game. There was at least one high profile draft pick hurt during the bowl season, but I'm quite sure you could say the same of virtually any weekend during the regular season.
Sitting out the last game of the season so you don't get hurt is like insuring your house one month a year, IMO.
